I often find myself in a dinner rut, making the same few things and getting super bored in return. Those meals are easy, but every once in a while I like to switch it up a bit.
After chatting with the members on my Facebook group about self-care, one mom mentioned the idea of a group collaborative menu. To facilitate this, I decided to make a month of easy meals (breakfast, lunch and dinner ideas!) and decided to share them here!
I will say that I do not cook every meal of every day during the week. This menu offers a variety of ideas (and clickable links to the recipes/blogs) for you to use in your weekly meal plans. I typically cook breakfast every morning, but if I am feeling rushed a bowl of oatmeal and some fruit is my go to. I found that I eat better lunches when things are prepared and ready to put together (with 3 young children, anything prepped and easy is best!), so I typically rely on salads and rotisserie chicken. That gets boring though, so I am excited to throw some of these new recipes into the mix! As for dinner, I try to cook at least 4 or 5 nights a week. We do leftovers usually one night and might go out another night. Dinner leftovers also serve as an easy to-go lunch for Brian (win-win, you’re welcome hunny! ha)
